White Cap with Herbs

A soft-ripened, bloomy rind cheese that strikes a lovely balance between the sweetness of sheep's milk and the pleasant lactic tartness of freshly fermented curd. Coated with a delicious blend of herbs and red pepper. Pasteurized.

Woodsman

A farmhouse-style long-aged raw sheep's milk cheese. With extra aging this cheese is wonderful grated or shaved over pasta or salad.

Tallulah

A washed rind, soft-ripened pasteurized sheep's milk cheese with a creamy interior and the famous aroma of b.linens, a combination of yeasts and molds that produce a reddish rind. The taste is smooth, mild and nutty.

Island Brebis

A raw sheep’s milk Tomme that is aromatic and dense. The flavor is pleasingly complex with rich layers of sweet, nutty, and herbaceous tones. Pairs well with a variety of wines and hard ciders.

Labneh

Pasteurized sheep milk. Serve on a plate, sprinkled with olive oil, olives, tomatoes, cucumbers and mint.

Summer Brebis

A pasteurized sheep milk tomme that is a young version of our Island Brebis. The flavor is pleasingly rich with sweet, nutty and herbaceous tones.

Blue Ewe

A mild and creamy, yet full-flavored cheese that is wonderful on salads, crackers or fruit. Pasturized.

Whidbey

Whidbey is a full-flavored, semi-firm cheese made from the unpasteurized ewe’s milk of Glendale Shepherd’s flock. It has a buttery texture and a sweet and savory flavor with notes of roasted nuts, figs and olives.
